  • 1 pound turkey sausage Can be substituted with pork sausage if preferred.
  • 2 cups frozen hash browns (shredded or diced)
  • 6 large eggs
  • 1 cup milk Dairy alternative can be used for a lighter version.
  • 1 cup shredded cheese Cheddar or your favorite blend.
  • 1/2 cup diced bell peppers Optional for a touch of color.
  • Salt and pepper to taste
  • Fresh herbs like parsley or chives for garnish Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the turkey sausage until browned and cooked through, breaking it apart with a spatula.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Add in the diced bell peppers, cooked sausage, and frozen hash browns, and mix until well combined.
  4. Grease a 9x13 inch baking dish and pour the egg mixture into the dish, spreading it out evenly. Top with shredded cheese.
Baking
  1. Place the baking dish in the preheated oven and bake for 45 minutes or until the eggs are set and the cheese is bubbly and golden.
  2. Let cool for a few minutes before cutting into squares. Garnish with fresh herbs.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, microwave individual portions or warm in the oven. Freeze unbaked for up to 2 months and thaw overnight before baking. Sauté any added vegetables beforehand for better flavor. Don’t overmix the hash browns with the egg mixture.
