Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the turkey sausage until browned and cooked through, breaking it apart with a spatula.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Add in the diced bell peppers, cooked sausage, and frozen hash browns, and mix until well combined.
- Grease a 9x13 inch baking dish and pour the egg mixture into the dish, spreading it out evenly. Top with shredded cheese.
Baking
- Place the baking dish in the preheated oven and bake for 45 minutes or until the eggs are set and the cheese is bubbly and golden.
- Let cool for a few minutes before cutting into squares. Garnish with fresh herbs.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, microwave individual portions or warm in the oven. Freeze unbaked for up to 2 months and thaw overnight before baking. Sauté any added vegetables beforehand for better flavor. Don’t overmix the hash browns with the egg mixture.
