  • 0.5 cup vegetable oil or melted butter Butter will add a rich flavor.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon The warm spice is key to the flavor.
  • 0.5 cup chopped nuts or chocolate chips Optional, but highly recommended for extra texture.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine the grated zucchini, sugar, and oil, mixing until blended.
  3. Add the eggs and vanilla extract to the mixture, stirring until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet ingredients, being careful not to over-mix. The batter should be just combined.
  6. If using, stir in the nuts or chocolate chips until evenly distributed.
Baking
  1. Pour the batter into the prepared loaf pan, smoothing the top.
  2. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  3. Once baked, let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store wrapped in plastic wrap or in an airtight container for up to 4 days, or freeze individual slices for up to 3 months. Thaw at room temperature or warm in the oven.
