- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, beat the eggs, then add the oil, brown sugar, and vanilla extract. Mix until well combined and smooth.
- Stir in the grated zucchini, ensuring it is evenly distributed in the batter.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until combined. Do not overmix!
- Fold in the chocolate chips gently to maintain a fluffy texture.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
To keep your muffins fresh, store them in an airtight container at room temperature for up to three days. If freezing, use an airtight bag for up to three months. Reheat in the microwave if desired.
